Roasted rainbow carrots.🥕 Drizzle olive oil on the pan and over the carrots. Toss to coat. Salt, pepper, onion powder. A couple of garlic cloves. Some fresh thyme & rosemary. Roast for 45 minutes at 350 F. Enjoy! I love to squeeze a little lemon on top to brighten the flavor. I am not much of a carrot fan, but I do love them like this!
